Chef Jorge Vallejo of Quintonil fame is headed to Dubai.
Considering team FACT hailed Trèsind Studio as 'Restaurant of the Year' at the FACT Dining Awards Dubai 2021 earlier this year, it's evident that we're big fans of Chef Himanshu Saini's culinary prowess. Now, the young tastemaker is gearing up to join forces with Chef Jorge Vallejo for an exciting dining event from 7 to 9 January. But who is Vallejo? And what makes this series of intimate collaborative dinners worth the wait?
The much-lauded Mexican chef studied at The Culinary Central in Mexico City and honed his craft in the kitchens of globally renowned restaurants (Noma and Pujol included) before striking out on his own. He opened Quintonil in Mexico City in 2012 and, for ten years and counting, the restaurant has been the centre of the dialogue on the current state of Mexico's culinary traditions – Vallejo places much importance on the relationship between gastronomy and the environment, culture and society, with an emphasis on how this impacts Quintonil and the greater community. This has inspired the chef to participate in both local and global forums on the subject and collaborate with several research and conservation projects.
Incidentally, Quintonil has been listed on The World's 50 Best Restaurants list since 2015, where it currently ranks #27 globally and #8 on the Latin America's 50 Best Restaurants list. Vallejo also holds the #47 spot on The Best Chef Awards list 2021. Through Quintonil, he continues to express Mexico's vibrant flavours with a personal touch. And because Saini's mission has long been to elevate how we experience Indian cuisine today – the culmination of which is Trèsind Studio – the upcoming collaboration promises to be a feast for the senses.
Diners will be treated to a selection of Vallejo's signature dishes alongside a curated selection of new dishes by Saini for AED 995 per person (food only), with both 6:30pm and 9:30pm seatings available. The collaboration is the latest instalment in a culinary series that has already featured collaborations with Ana Roš of Hiša Franko in Slovenia, Riccardo Camanini from Italy's Lido 84, Manu Buffara of Brazil's Ristorante Manu, and Christopher Hardiquest of Bon Bon in Brussels.
