If you’re after authentic Peruvian flavours, then head to Conrad Abu Dhabi Etihad Towers. The hotel is opening a pop-up restaurant, Pachamama by Eber Villalobos. Running from 9 December to 9 March, it pays homage to the chef’s Peruvian roots.
Chef Eber grew up in Chiclayo, Peru. As a child, he would watch his mother and grandmother cook, and this inspired him to work in the food industry. He has previously worked at Grosvenor House Dubai. Plus, he is the Head Chef at Conrad Abu Dhabi Etihad Towers.
Pachamama means Mother Earth in Peruvian and reflects the restaurant’s commitment to using sustainable, seasonal, and locally sourced ingredients. Chef Eber uses cooking techniques that have been passed onto him from his family and aims to preserve the simplicity of traditional dishes.
The menu spans para la mesa, de la barra, salads, starters, chef’s specialities, sides and endulza la vida. The highlights include ceverchi, empanadas and tacos. The starters include Short Rib Empanada and Veal Tacos. The chef’s specialities include Beef Cheeks, Chaufa, Fideua and Parrila. The desserts include a Chocolate Tart, Churros, Ice Cream and Fruit Platter.
On the opening day on 9 December, Pachamama by Eber Villalobos will host a brunch, which runs from 1pm to 5pm. The event includes highlights from the menu, drinks and live entertainment. The brunch starts from AED 290 for a soft package and AED 450 for house beverages.
Pachamama by Eber Villalobos takes over the space formally occupied by Tori No Su and is open from Tuesday to Sunday from 7pm to midnight.
