The space is minimal and contemporary, reflecting a philosophy of calm. Clean lines, soft tones, and natural textures invite you to unwind and savour the moment. The culinary direction is led by Sicilian-born Chef Matteo Casamichela, who trained under the legendary Gualtiero Marchesi. At LOMA, he introduces what the team calls “fine probiotic dining,” a thoughtful approach that pairs Mediterranean technique with nutritional intent. The menu is built around a single hero ingredient, fermented date fibre, which brings prebiotic benefits, subtle sweetness, and pleasing texture to breads, desserts, and even ice creams.
Dishes are composed to balance taste, texture, and bioavailability. Expect fresh bakes that are light yet satisfying, and desserts that feel indulgent without the downturn. The aim is to prove that eating well does not mean compromising on pleasure. Probiotics and functional ingredients are integrated with Mediterranean flavours to support gut health, longevity, and overall balance.

Even hydration receives attention. Guests are served energised water, “structured using hydrodynamic principles inspired by Victor Schauberger and enriched with bio-informed trace minerals”, turning a basic ritual into part of the wellness journey.
