SANA, a contemporary Uzbek restaurant, will open this September at Jumeirah Mina A’Salam. The concept invites diners to explore the Silk Road through bold flavours, rich culture, and modern hospitality.

Backed by BIK Hospitality Group, founded by Boris Kofman and Alexander Kolobov, SANA draws inspiration from the legendary Restaurant Uzbekistan in Moscow. Under the guidance of Chef Glen Ballis, whose career spans Melbourne, Moscow, London, and Asia, the kitchen pairs time-honoured Uzbek recipes with contemporary Asian influences. The result is a menu that bridges East and West with confidence.

Stepping into SANA, design plays a central role. Earthy palettes, artisanal textures, and subtle Uzbek details create a space that is both timeless and transportive. The restaurant unfolds across elegant dining rooms, a floating terrace, and a hidden bar named Moon. SANA will honour the culinary heritage of three distinct cuisines: Uzbek, Middle Eastern, and Pan-Asian. Signatures include Plov, slow-cooked to perfection, Shashlik Skewers, Wood-fired Meats, and delicate pastries such as Olat Somsa and Chebureki. A selection of salads, soups, and flatbreads adds depth, with dishes designed for sharing and communal dining.
